Cup brown sugar

2 Tsp onion powder

A pinch of oregano

Preparation
In a small mixing bowl, combine together all the ingredients. Stir them thoroughly to mix well. Using your fingers, break up the chunks of brown sugar, if any. Mix evenly to get a smooth rub.

Ingredients
4 Tbsp black pepper, freshly ground
4 Tbsp thyme
2 Tbsp curry powder
4 Tbsp cumin
2 Tbsp cayenne pepper
4 Tbsp garlic powder
1 Tbsp onion powder
2 Tbsp salt
1 Tbsp MSG or other flavor enhancer (optional)

Preparation
In a small mixing bowl, combine together all the ingredients. Stir well to mix. You can immediately use this rub or store in a dark, cool place for several months. This rub is quite strong and hence, not recommended for thin cuts such as ribs.

2 Tsp freshly ground black pepper

Step 1- Gathering The Necessary Items

If buildup from food is left to long, it can become increasingly difficult to remove, and can end up causing problems such as rust.

Step 3- Spray Cooking Oil

Once you are sure that your grill is free of all buildup and debris, and that your grill is completely cooled off, you will want to spray it down with a light layer of cooking oil. Spraying it down with cooking oil will prevent your barbeque grill from rusting. It is especially important to make sure you barbeque grill is completely cold, as spraying cooking oil on a hot surface may cause the oil to heat up and ignite, which could be potentially dangerous to you and your barbeque grill.

Step 4- Use Baking Soda and Aluminum Foil on Your Grill

Baking soda is a very nice cleaning and polishing agent. Once you have removed any extra debris and buildup, lightly scrubbing your barbeque grill with baking soda will give it that extra shine, similar to the day that you brought it home from the store. This can also be used on handles and knobs to remove any extra buildup tat cannot be taken off with a wire brush.

Aluminum foil can also be used to keep your grill looking nice. Gently rub the aluminum foil on your grill, and you will notice that it removes grim and buildup. This is a cheap and inexpensive way to clean your grill.

Step 5- Clean Your Racks

The racks in your grill are especially important as this is where the food touches when it is cooking. You will have to use the wire brush to remove as much buildup as possible. Once you remove as much as possible, start washing the racks with dish soap. If the racks are really dirty, you may also want to use the steel wool pads. Be sure to completely rinse off all soap and residue before cooking on these racks again.

In fact, each time I put a tender slice of Texas style barbecue into my mouth, the juicy and flavorful piece of meat convinces me that the Texans where the only ones to perfect the BBQ art. Nonetheless, it is not just the taste factor, the Texas bar-b-qs enjoy equal acceptance as health food.

Like everyone else, if you are wondering what makes the Texas barbecues so special, I will tell you that it is almost everything. Brined Whole Chicken BBQ Recipe

Ingredients:

  • 1/4 cup pickling spice (1/2 of a 1-1/2-ounce jar)

  • 2 quarts water

  • 1/3 cup salt

  • 1 broiler-fryer chicken, 2-1/2 to 3 pounds

Preparation:

Take a Dutch oven, pour some water in it and then add the pickling spice and salt and boil it.

Then remove it from heat and chill it. You can remove giblets from the chicken pieces that you have, rinse them and squeeze them dry. Then remove the chicken from the marinade and get rid of the extra marinade with the help of paper tissues.

Put the chicken in away that the breast side is up and place it in the center of the cooking grate. Grill the chicken up to one to one hour forty-five minutes until the temperature of the chicken rises up to approximately 180 degree Fahrenheit. So at this point the drumsticks would also move with ease. This is it! Now you can serve the chicken.

Barbecue Chicken Kisses

Ingredients:

  • 2 tablespoons barbecue sauce

  • 1/2 onion, chopped

  • 1/2 green bell pepper, chopped

  • 1 skinless, boneless chicken breast half – cut into bite-size pieces

  • 1 potato, peeled and cubed

Preparation:

The first step would be to heat the grill on a medium high heat and oil the grate lightly. Now take two sheets of aluminum foil so that you can place the chicken breasts, potato, green bell pepper and the onion along with the barbecue sauce in the center of the foil and pack it.

Make as many as these packages as you want and then grill them at a moderately high temperature for approximately 35 minutes or until the temperature of the meat reaches approximately 180 degree Fahrenheit. So the chicken kisses are ready and now you can enjoy these amazingly tasty chicken kisses and this would be the best kiss you have ever had.

Chicken with mustard sauce and green beans

Ingredients:

  • 1 tbsp Dijon mustard

  • Salt and freshly ground black pepper

  • 1 tbsp unsalted butter

  • cup pouring cream

  • 2 tbsp olive oil

  • 1 tbsp wholegrain mustard

  • 5 skinless chicken breast fillets (about 1000g total)

  • 350g green beans, trimmed

  • 1 tbsp wholegrain mustard

Preparation:

You can heat the oven before you start preparing the chicken so that it is ready by the time you are ready to grill the chicken to approximately 180-200 degree Fahrenheit. In the meantime flavor the chicken with salt and pepper. Mix some butter and oil in pan and heat them. Add the chicken fillets in the pan when the butter is not foaming anymore and fry it for approximately one to three minutes so that each side takes an attractive golden brown color.

Now put the chicken on the roasting tin and roast it for about fifteen minutes till the chicken is cooked thoroughly. Now put the chicken pieces on the plate and cover them to keep it warm.

Now prepare the sauce with the chicken stock. Put it in the frying pan in which you fried the chicken so that the pieces and bits of chicken flow into it.

Boil the stock and add mustard and simmer it for another five minutes. Now add the cream and boil the sauce till it becomes thicker. In the meantime cook some beans in salted water and roast them for about fifteen to twenty minutes and serve them with chicken and mustard sauce.

BBQ Sauce Secrets

In many ways, sauces are the Cinderella component of meals. Often thrown together at the last minute or just ‘there’ to keep other foods moist. Or, meat juices are thickened with flour and combined with water and/or wine to form a gravy.

Yet, in the French culinary tradition a sauce is an integral component of the meal. A sauce should complement a meal and lift the flavours of the dishes being prepared. Which is why, all kitchens based on the French tradition will have a specific saucier to create sauces.

Of course, sauces all hail back to the one-pot tradition of cooking stews in a single pot over a fire. Only later, with the development of cooking ranges and special pans could the main foods and the sauces be prepared separately. Indeed, it’s with the Roman tradition of multi-couse meals that sauces, as we know them today, (known as condimentum) begin to develop.

The next recipe is for a homemade barbecue sauce, based on an Australian original:

Barbeque Sauce

Ingredients
1 tbsp cider vinegar
2 tbsp mustard powder
1 tsp hot chilli powder(1 tsp of ground mace
1/2 tsp salt(180ml passata (tomato sauce)
2 tbsp brown sugar
2 tbsp Worcestershire sauce
2 tbsp lemon juice
4 allspice berries, ground to a powder
2 juniper berries, crushed
10 long pepper fruit, ground to a powder (optional)

Method
Simply mix all the ingredients together in a small bowl and stir to combine. For an extra kick add 10 long pepper fruit ground to a powder.

Use as a marinade and/or basting sauce for barbecued meats.

It should also be remembered that many dishes, like ragus are, themselves, cooked in thick (often tomato-based) sauces as are many fish dishes. There are a range of classic sauces such as Bchamel, Holandaise, Rag, Piquante, Marinara, along with barbecue sauces and hot-pepper sauces that form the foundation for much of modern cookery and should be in every cook’s repertoire.

The classic sauce, of course, is a basic white sauce, a recipe for which is given below:

Classic White Sauce

Ingredients
425ml milk
2 sticks of celery
1 bay leaf
1 blade of mace
10 while black peppercorns
1 0.5mm slice of onion
40g butter
20g plain flour
salt and freshly-ground black pepper, to taste

Method

Place the milk in a small pan along with the celery, bay leaf, mace, peppercorns and onion. Cook on low heat until it comes just to a simmer (about 5 minutes) then remove from the heat and strain into a jug or bowl (discard the flavourings).

Add the butter to the pan and melt gently then add the flour and stir-in vigourously to make a smooth paste. Add the milk a little at a time, whisking all the while (incorporate each slug of liquid completely before you add the next) and continue until all the liquid is incorporated.

Turn the heat to its lowest setting and allow to sauce to cook slowly for 5 minutes, whisking occasionally. Season with salt and black pepper and use immediately.
